We want to promote our know-how through quality local products, so you can experience the best of French bakery. All our brioches and breads made in Gilly-lès-Cîteaux are organic and made from European products. Our products are available in bakeries or by clic & collect.

All our products are ORGANIC, both for your pleasure and that of our farmlands.

Yes, they’re also all made from European products, because the local economy is important to us. As you might have understood, we’re committed to the values of mutual aid and sharing, in the adventure that is Chez Charles bakery. The wheat and rye flours we use are local, produced in the Côte-d’Or region. We’re therefore committed to a local approach, working with local suppliers for our cheeses, honeys and eggs.

Water represents 30 to 40% of bread dough!

To obtain good sourdough fermentation, and therefore good organic bread, you need pure, living water. Chez Charles, we’ve chosen to use a top-of-the-range water filtration and dynamization system: Vital Quartz.

The various filters eliminate all undesirable contaminants and pollutants, while preserving the minerals and trace elements contained in the original water.

After filtering, the water is dynamized in a vortex. Water, like a grain of wheat, keeps its initial structure in its memory, and this process helps it to regain it. Our yeasts and breads can then reveal their full flavour.

We’d like to thank all our partners for their help and assistance in ensuring the smooth day-to-day running of our sourdough bread & brioche production.

We’d also like to thank AMAP Les Paniers de la Vouge, the Gilly-Lès-Cîteaux town hall, CIFA Jean Lameloise, Jean-Louis Bottigliero, Charles’ family, Bénigne & Joseph Barbier, and Julien Bouchard for supporting us from the very beginning of the amazing adventure of opening an organic bakery in the center of Gilly-Lès-Cîteaux.

My studies in logistics followed by an Executive MBA at EM Lyon gave me a taste for entrepreneurship. After 15 years in various positions, mostly with the SEB Group, I launched my first company, EcloLINK in 2011.

As a child, I have always dreamed of starting my own chocolate and bread business. The Covid crisis and the “essential job” phenomenon brought this dream back to life. I therefore trained at the CIFA Jean Lameloise and obtained my CAP Boulanger in 2021.

After a few months of testing bread making and sales from my home, we received a lot of support from the locals.

We then decided to invest together and set up shop in the heart of the village, opposite the château, following a good idea from Bénigne BARBIER, manager of the café which opened at the same time as the bakery.

Through our bakery and my profession, I hope to inspire our children to be enterprising, and to show that it’s possible to make high-quality products in the heart of our villages.

Chez Charles bakery is a tribute to our grandparents. Those years when conviviality, generosity and sharing were the fundamentals of living together.

A time when each village had a bakery, a café and a lively square to celebrate each day.

Opening a bakery in the village of Gilly-lès-Cîteaux also fulfilled a very important criteria for us: to regain a feeling of village spirit and proximity to local residents. Being able to offer a simple service is very important for us, but also for a village and its inhabitants.

We would like to thank everyone who has supported us since the beginning of this adventure.
